FOOD STORAGE FREEZING MEAT
Posted on Wednesday, November 3rd, 2010 at 2:28 am

a question about cooking and storing meat HACCP?
can you defrost a piece of meat, then reheat it and then freeze any leftovers and then eat them cold.
e.g. defrost some beef, roast and serve hot, reheat and eat again, freeze leftovers. defrost meat and eat cold ie on a salad.
i dont need storage instuctions or details i just need to know if some food can be twice cooked, frozen defrosted and eaten cold?
also it would be helpful if i knew the official standpoint and where its documented.
yeah i dont see why not. i worked in a carvary and we done it all the time , as long as tou stick to the correct temps, but id recommend using a blast chill or rapid cooling if wanted to serve cold.
