30 degrees Farenheit is good for these products; watch the garlic for sprouting, though, if it’s still whole. I’ve had a great deal of food handling experience, so I’d recommend refrigeration around this temperature. If it’s been minced or diced already, it’s good to keep it in its own juices for storage, and use it more quickly than you would whole cloves or the entire bulb. Chilis can still get moldy on you quickly, so watch the moisture content. Garlic also likes it dry.
